Approximately the size of California and Texas combined, Colombia, the gateway to South America via the Pan-American Highway, is bordered northwest by Panama, northeast by Venezuela, west by Brazil, southwest by Ecuador and south by Peru. Located in southern Columbia amidst the three northern “cordilleras” (translated mountain range) extensions of the Andes, approximately 345 miles north of Ecuador and 530 miles south of Panama, at mile marker 8000 along the Pan American Highway, is the coffee region of Huila. The Nevado de Huila Volcano, offering mineral rich soil, and a perfect microclimate in proximity to the equator, provides chemistry for an exceptionally complex coffee. Here Supremo EP is cultivated between 4990 – 5400 feet on a typically small 8-acre farm and, after harvest, centralized at larger mills for processing. Supremo beans are slightly larger than the decreasingly smaller to smallest Excelso, Extra and Pasilla beans. The Supremo designation indicates a certain uniformity contributing to better quality control during cultivation and processing.
